Yuca al Mojo cassava
(Yuca)

Appetizer

Ingredients:

4-6 fresh cassavas, peeled or halved, or
1 20 ounce package frozen cassava (yucca)
1 teaspoon salt
4 garlic cloves, minced
1 lemon, juice of
½ cup pure Spanish olive oil

Place cassava in large pot and cover with water.  Add salt.  Boil cassava until very tender (about 30 minutes or more).  Drain off water and set cassava aside.  Sprinkle minced garlic over the cassava and add juice of the lemon.  In a separate small pan, heat olive oil until it begins to bubble.  Pour it immediately over the cassava and gently mix.

Serves 6-8.
