SALSAS & SAUCES

MOJO SAUCE
(for meat, pork, poultry and fish)

Specialty Sauce

Ingredients

3 tablespoons pure Spanish olive oil, heated
2 tablespoons finely chopped onion
2 garlic cloves, minced
½ teaspoon ground oregano
¼ teaspoon ground cumin
Dash of ground bay leaves
Dash of black pepper
1/8 teaspoon salt
2 tablespoons sour orange or lime juice
4 tablespoons water
1 tablespoon Sherry wine
½ teaspoon vinegar

Mix the onion and garlic, along with the spices, salt, and pepper in a bowl, and then add to a pan with the heated olive oil.  Cook just until onion becomes translucent, and then add juice, water wine and vinegar and simmer about 5 minutes.
