FRIED SWEET PLANTAINS
(Platanos Maduros Fritos)

Ingredients:

Ripe plantains (1 per person)
Frying Oil

Select very ripe plantains, with a partially black or all black peel and a little soft to the touch.  Remove the peel and slice the plantain obliquely or in a slant in 1 inch slices.

Heat cooking oil to medium heat and fry the plantain slices on their cut surface.  Oil should cover at least one half of the plantains.  Fry until golden brown on each side.  Remove from pan and place on clean brown paper to drain excess oil. 

Yield: 1 plantain per person

It can be eaten before dinner with dinner or after dinner.
