BREADED CHICKEN BREAST FILET
(Filete de Pollo Empanizado)

Ingredients:

1 Chicken breast filet, ¼ inch thick
¼ cup chopped onion
½ tablespoon minced fresh garlic
1 spoon full of Mojo sauce
¼ teaspoon salt
4 eggs well beaten
1 cup finely ground cracker meal, salted to taste
½ onions sliced into rings

Sprinkle steaks with chopped onion, garlic, Mojo juice, and salt. Rub garlic into meat. Marinate for a few hours in the refrigerator. Brush off the onion pieces and dip each steak in the egg first and then cracker meal, coating the steak completely. Fry steaks in cooking oil on medium heat until golden brown and well done.
